Achari Chicken is a spicy non-vegetarian recipe which is a mixture of chicken, herbs and lots of spices. This is an easy-to-make chicken recipe that’s delicious in it’s own way.

- Ingredients to make Achaari Chicken:
- First heat mustard oil in a pan. When the oil comes to smoking point, add slit green chilies and fry them. Once done, take out the chillies, now turn the flame low. In the same oil, add cumin seeds along with a little fenugreek seeds (else it will make the dish bitter), few onion seeds, fennel seeds and mustard seeds or rai to temper.Saute these spices and allow them to release their flavour. But be careful so that they don’t burn. Add whole dried red chilies and bay leaf in the pan and gently stir again. Now add sliced onions and cook until they are are lightly golden brown. Crush 7-8 garlic cloves in a mortar pestle and add it to the same pan. Saute till fragrant.Now add the ginger paste and cook well until raw smell goes away. In a separate bowl, add yogurt and to this add red chili powder, turmeric powder, cumin powder, crushed coriander or coriander flakes and garam masala powder. Whisk the yoghurt well with these spices and directly pour in the pan. Cook until yoghurt mixture separates from the oil.
Finally add in the chicken. Cook the chicken on high flame for the first ten minutes and then cover it with a lid, and cook on low flame for about 20 minutes. After every 7-8 minutes, open the lid and check again so that it doesn’t scald. After 20 minutes of cooking the chicken will become tender and juicy. You will notice that the color of the chicken has changed into dark brown. At this point, the oil will also separate.
Then add panch phoron, lime juice and chopped cilantro in the chicken. The achari chicken is ready to serve. Enjoy this chicken recipe with rice or roomali roti. It can also be enjoyed as it is.
