Try this cool and refreshing Chicken Salad which is easy, healthy and tasty with the combination of tender chicken and vegetables.Great food for Iftar.
- 8 pieces chicken nuggets
- salt as required
- 2 teaspoon mayonnaise
- 1/2 bunch baby lettuce
- 1/2 bunch mint leaves
- black pepper as required
- 1 teaspoon vinegar
- 1 egg
To start with, chop lettuce and mint leaves on a chopping board. Boil the egg in a pan and keep it aside to cool. When cooled, Slice eggs into thin round slices. This will be used later for garnishing.
Then boil chicken nuggets in a deep bottomed pan with a little water to make it tender. After the nuggets boil, drain the water.
Now, add the nuggets to a bowl along with chopped lettuce, mint leaves, vinegar, pepper, mayonnaise and salt. Mix well and serve by garnishing with egg rings.
Serve on a bed of lettuce with sliced tomatoes, in half an avocado or in a chicken club sandwich made with artisanal bread, crispy smoked bacon, vine-ripened tomatoes and lettuce.
