Kulfi is a popular North Indian recipe.It is extremely delicious and can be served for Iftar or in any hot summer day.

Ingredients to make Kulfi:
2 1/2 cup full cream milk
1 tablespoon corn flour
2 crushed green cardamom
200 gm condensed milk
1/8 teaspoon saffron
tablespoon shredded almonds
1/2 tablespoon Raisins
1 tablespoon shredded pistachios
Blanch the whole almonds and pistachios together and remove the skin. Then grind them to a paste with 2 tblsp milk.
Transfer the condensed milk to a heavy-bottomed pan. Combine cornflour and 1/8 cup of milk and stir till cornflour dissolves well. Keep aside.
Pour the remaining milk into the pan and stir constantly. Add cardamoms and saffron strands(soaked in 1 tblsp warm milk) with the milk. Place the pan over moderate flame and allow to boil.
Reduce flame to low and simmer for 6 to 8 minutes. Remove and add the almond-pistachio paste. Mix well and keep aside to cool.
Garnish with shredded almonds, pista and raisins. Pour into kulfi moulds and keep in the freezer to set. Remove and serve.
