Red Velvet Cake

Red Velvet cake is traditionally a red or red-brown layer cake topped with white cream cheese or cooked roux icing.

For the cake:

– 1 cup butter, at room temperature
– 1 1/2 cup castor sugar
– 1 tsp vanilla essence
– 2 eggs
– 2 cups flour
– 1 tbsp cocoa powder
– 1 tsp baking soda
– 1 tbsp red gel color

For the icing:

– 4 cups hung curd (hung for min. 3 hours)
– 2/3 cup icing sugar
– 1 tsp vanilla essence


For the cake:

– Grease two 7″ baking tins with butter and dust with flour. Tap out the excess flour. Keep aside.
– In a large bowl, cream butter until creamy. Add the castor sugar and vanilla essence. Beat until well combined. Add the eggs and beat again.
– Preheat oven to 180C.
– Add the flour, cocoa powder, and baking soda and mix well. Mix in the food coloring. Pour the batter into two greased tins. Bake for 25-30 mins or until a skewer inserted comes out clean. Cool them completely before icing.

For the icing:

In a large bowl, beat the hung curd lightly until creamy. Add in the sugar and vanilla essence and mix. Pipe into a piping bag and refrigerate until use.


– Cut the bulging top crust to even out the cakes. Flip it so that the cake is even and easier to ice. Pipe a layer of icing onto the first cake.
– Place the other cake on top and press lightly. Pipe another layer of icing and spread evenly to fully cover the cake. Decorate as per your wish and serve.
